MY MAINTENANCE PHASE POWER BOWL SALAD WITH CHIPOTLE RANCH AIOLI
If you love anything chipotle, this aioli dressing is absolutely amazing! If
you'd like a regular power bowl (not a salad) simply omit the
lettuce and serve the rice and chicken or beef warm.
Salad Ingredients:
1 cup shredded lettuce
½ tomato, chopped
½ red pepper, chopped
½ yellow pepper, chopped
½ avocado, cut into pieces
⅛ c. green onion
½ c.
mushrooms
½ c. cooked brown rice
½ c cooked, shredded beef or chicken
My Chipotle Ranch Aioli Dressing:
¾ c. mayonnaise (See
homemade
mayonnaise recipe)
1/2 cup full-fat coconut milk
1 tbsp. minced fresh dill
3-6 Chipotle chilies in adobo sauce (You can use chipotle
seasoning if you're in a pinch, but it lacks the smokey flavor a
wee bit. Add a little at a time until it's to your taste.)
2 tsp. lime juice
1 tsp. lemon juice
1 teaspoon apple cider vinegar
1 tsp. cilantro, chopped
1 tsp. garlic powder
¼ tsp. fine sea salt
¼ tsp. ground black pepper
Directions:
Chop veggies and layer separately in a bowl with rice and
shredded meat.
Make the Dressing and
Assemble Salad.
In a small blender (I use a magic Bullet)puree chipotle peppers
and adobe sauce for 30 seconds. It should be thick like a paste
(it won't be smooth). Transfer to a bowl but do not rinse out
the blender. Add the rest of the ingredients and blend for
another 30 seconds. Add 1 tbsp of the chipotle peppers at a time
and test the heat before adding more. Add ¼ c. dressing to your
salad. You can add more or less to your liking. Adjust
according to taste. refrigerate for a minimum of 30 minutes
before using. Store leftover aioli in an airtight container for
up to 1 week.
